Well before you can eat you have to learn how to cook!  The Barony of Settmour Swamp invites everyone join us at our Cooking Collegium on January 24th, from 10:30 am to 9 pm at the American Legion Hall # 155, in Whippany NJ, to learn all about creating feasts.  From beginner chefs to advanced ones, we have classes to satisfy your brain and your stomach.

Throughout the day cooking, herb and brewing related classes will be taught, as well as “How to Autocrat” and “How to Run/Work Troll” classes.  The event, which is onboard only and includes a light dayboard and a feast, costs $16.00 dollars for adults (non-members will have to pay an additional $3), $15 for the 17 and younger crowd, $6 for children 6 and under, and no charge for babes in arms.  The site does not have facilities for children, and due to the nature of some of the classes parents must make arrangements to have their children watched at all times.  Please, please make reservations, so we adjust our class and feast sizes.  The site is wet, but all alcohol must be bought from the bar on-site (with an exception made for the brewing classes and competition).

Three types of classes will be taught:  technique and theory, tasting (sampling foods) and hands-on (cooking in a kitchen).  There will also be an all-day “How to Run a Kitchen” class, in which the students will actually cook the feast.  Other classes include Spanish Period Foods, Food and Kitchen Safety and Period Chocolate.  Some classes may require pre-registration, and you can check the Settmour Swamp website (http://settmourswamp.eastkingdom.org/ ) for updated class information and descriptions.

The day’s activities also include Cooking and Brewing Competition, an auction and a Bake Sale (baked goods are welcomed, please have an ingredient list).  There will also be roundtable discussions on various SCA cooking topics as well as mini-classes demonstrating certain cooking techniques.

We do have space for merchants, and can provide round tables.  We prefer that merchants somehow connect to our theme, but that is not a requirement.  Please contact the autocrats for more information.

The hall is handicap accessible and has a chair lift.  Please alert the autocrats if you have need of this so we can make arrangements.  The hall also has newly finished wood floors— so please no shoes or spurs that will damage or mark the floors.  There is also room for Guild Meetings, or other types of gatherings.  Please contact the autocrats to schedule a meeting.
